Type, history and area of origin: organic brut sparkling wine charmat rosé method
The passion and knowledge received from internships and work experiences with French producers led us to experiment and transfer their methods of vinification and fermentation to our grapes. The collaboration relationship with our friend Oenologist and Champagne producer Julian Gout graduated from the Faculty of Sciences of Reims-Champagne between our Oenologist Lamberto Tosi and has allowed us to create our Charmat Method rosé version. in Camarque at producers of the famous Vin de Sable, they helped us in the realization of our Charmat method. Fruit of three / six months of aging in autoclave, here is one of the first Charmat Method rosé version of the Tuscan coast. Obtained from grapes harvested manually in the third week of August. The salmon pink color and its aromas make it a truly interesting sparkling wine.
The grapes come from the vineyard at Villa Borbone in Torre del Lago, in the Natural Park of Migliarino and San Rossore, on sandy soil 800 meters from the sea. Its freshness makes it excellent for aperitifs and its strong character and slightly salty finish also recommend it for fish-based meals.
Blending vines: 50% Sangiovese e 50% Syrah
Vinification and aging: With the aim of getting the most out of our grapes, the harvest is exclusively manual. The grapes come from our vineyards between Viareggio and Torre del Lago on the border with the Natural Park of S. Rossore and Massaciuccoli, on sandy soil 800 meters from the sea. Transported in small baskets to the cellar, they are gently pressed and immediately placed in the couves. The alcoholic fermentation takes place in temperature-regulated stainless steel containers at 16 ° for 8/10 days and the refinement continues in steel for 6 months. At the beginning of January the second fermentation takes place in an autoclave at a controlled temperature for 3 months. Bottled in April without further sugar additions and with low sulphite content, to obtain our charmat dosage Zero method.
The “Secret Style” continues its refinement in the bottle for another 2/3 months before being marketed.
Tasting: Delicate but strong color and a nice clarity. Dry and balanced, made gentle by the fruity notes of Syrah, it preserves the salinity of the place of origin in the finish. The nose is very fragrant and the fruits are well present, in the mouth it is round and balanced. Its freshness makes it suitable for aperitifs and its strong character typical of Sangiovese and the salty finish make it suitable also for fish dishes.
